Avocado Quesadillas

Ingredients 3 avocados, seeded, peeled and sliced
Juice of one lemon
Salt
1 lb. cheddar cheese, shredded
1 can French’s French Fried Onions
1 pkg. (12) Brookshire’s fresh made flour tortillas
Preparation Tossed avocado slices with lemon juice and lightly salt. Heat a large skillet or flat grill on medium heat. Lightly spray pan with non-stick coating. Place a tortilla in the pan and sprinkle one half with cheese. Place slices of avocado on top of the cheese, then the onions followed by another layer of cheese. Fold remaining half over the cheese avocado layers and cook until the tortilla is crusty brown. Flip over and brown the other side. Continuously place the tortillas in the pan until all are cooked. Cut in wedges and serve immediately with sour cream and salsa.
