Spinach Soup

2 10 oz packages frozen chopped spinach, thawed 2 16 oz cans stewed tomatoes 1 8 oz can tomato paste 2 cups onion, chopped 1/4 cup olive oil 3/4 cup water 1 clove garlic, minced Italian seasoning, to taste |
| Preparation |
Combine onions, garlic, and olive oil. Saute over moderate heat until onions are transparent. Approximately 15 minutes. Add water and spinach. Simmer 5 minutes. Stir in tomato paste and stewed tomatoes. Add Italian seasonings to taste. Simmer 15 minutes. Garnish with grated Parmesan cheese. Can be served over pasta with hot garlic bread. |
